Ingredients

2 large ripe bananas

1 cup creamy peanut butter

1 cup dark chocolate chips

1 tablespoon coconut oil

1/2 cup unsalted roasted peanuts (chopped)

Sea salt (for garnish)

Instructions

Prepare the Bananas: Peel the bananas and slice them into 1-inch thick rounds. Lay the slices on a parchment-lined baking sheet.

Peanut Butter Layer: Using a small spoon, dollop about 1 teaspoon of peanut butter onto each banana slice. Then, top each with another banana slice, creating little sandwich bites. Freeze the banana sandwiches for about 30 minutes, or until firm.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until the chocolate is fully melted and smooth.

Coat the Bites: Remove the banana bites from the freezer. Using a fork or toothpick, dip each sandwich into the melted chocolate to fully coat them. Allow any excess chocolate to drip off before placing them back on the parchment-lined baking sheet.

Add the Crunch: While the chocolate is still wet, sprinkle chopped peanuts on top of each chocolate-coated banana bite. A light dusting of sea salt adds a delightful contrast to the sweetness.

Final Freeze: Place the baking sheet back into the freezer for about 1 hour, or until the chocolate has completely hardened.

Serve and Enjoy: Once set, remove the Frozen Banana Snickers Bites from the parchment paper and store them in an airtight container in the freezer. Enjoy them straight from the freezer whenever you're craving a sweet snack!
