Ingredients

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup fresh strawberries, hulled and sliced

4 slices of thick bread (Texas toast works best)

1/4 cup strawberry preserves or jam

2 eggs

1 cup whole milk

1 tsp ground cinnamon

1 cup all-purpose flour

1/2 cup breadcrumbs (panko for extra crunch)

Oil for frying

Whipped cream (for serving)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.

Assemble the Sandwiches: Spread the cream cheese mixture on two slices of bread. On top of the cream cheese, layer the sliced strawberries and a spoonful of strawberry preserves. Top each sandwich with another slice of bread.

Set up the Breading Station: In one shallow dish, whisk together the eggs and milk. In another dish, mix the flour and ground cinnamon. Lastly, place the breadcrumbs in a third dish.

Bread the Sandwiches: Dip each sandwich first into the flour mixture, coating both sides. Then, dip into the egg mixture, ensuring it’s fully covered. Finally, dredge it in the breadcrumbs until well coated.

Heat the Oil: In a large skillet or frying pan, heat about an inch of oil over medium heat until hot (around 350°F/175°C).

Fry the Sandwiches: Carefully place the breaded sandwiches into the hot oil, working in batches if necessary. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

Drain Excess Oil: Remove the fried sandwiches and place them on a paper towel-lined plate to absorb any excess oil.

Serve: Cut each sandwich in half diagonally and serve warm, topped with whipped cream and garnished with fresh mint leaves. You can also drizzle a little extra strawberry preserves for an added touch.
