Fresh Tomato Avocado Pasta

12 oz spaghetti or your pasta of choice

2 cups ripe cherry tomatoes, halved

1 large ripe avocado, diced

3 cloves garlic, minced

1/4 cup fresh basil, chopped

1/4 cup extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and black pepper to taste

1/4 teaspoon red pepper flakes (optional)

Grated Parmesan cheese (for serving, optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Prepare the Tomato Mixture: In a large skillet over medium heat, add the olive oil. Once heated, add the minced garlic and sauté for about 1 minute, until fragrant.

      Add Tomatoes: Stir in the halved cherry tomatoes, and sauté for an additional 2-3 minutes until they are soft and beginning to burst. Season with salt, black pepper, and red pepper flakes if using.

        Combine Pasta and Tomato Mixture: Introduce the cooked spaghetti to the skillet. Toss to combine, adding reserved pasta water a little at a time to loosen the mixture as needed.
