Fresh Mango Coconut Chicken Salad

2 cups cooked and shredded chicken breast

1 ripe mango, diced

1/2 cup fresh coconut meat, shredded (or 1/4 cup unsweetened shredded coconut)

1 red bell pepper, diced

1/2 red onion, thinly sliced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 avocado, diced

1/4 cup lime juice (about 2 limes)

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1/4 cup chopped cashews or almonds for garnish

Instructions
 

Prepare the Chicken: If not pre-cooked, poach or grill the chicken breasts until they are fully cooked. Allow them to cool, then shred the chicken into bite-sized pieces.

    Mango and Coconut: While the chicken is cooling, peel and dice the mango. If using fresh coconut, grate the coconut meat. If using shredded coconut, measure out the amount needed.

      Mix the Veggies: In a large mixing bowl, combine the diced mango, shredded coconut, red bell pepper, red onion, cherry tomatoes, and cilantro.

        Combine the Salad: Add the shredded chicken to the mixing bowl with the vegetables and mango. Toss gently to combine all the ingredients.

          Dress the Salad: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour the dressing over the chicken and mango mixture.

            Toss & Chill: Gently toss the salad to ensure everything is evenly coated with the dressing. Cover and chill in the refrigerator for at least 30 minutes to let the flavors meld together.

              Serve: Before serving, add the diced avocado and toss lightly. Garnish with chopped nuts if desired. Taste and adjust seasoning if necessary.
