Fresh Corn Avocado Fritters

Ingredients
  

2 cups fresh sweet corn kernels (about 3-4 ears)

1 ripe avocado, mashed

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/2 cup green onions, finely chopped

1/2 tsp garlic powder

1/2 tsp cumin

1/4 tsp red pepper flakes (optional, for heat)

Salt and black pepper, to taste

1/4 cup fresh cilantro or parsley, chopped

1/3 cup milk (dairy or non-dairy)

Olive oil, for frying

Lime wedges, for serving

Instructions
 

Prepare the Corn:

    - If using fresh corn, husk the ears and remove the kernels using a sharp knife. You should have about 2 cups of corn kernels. If you're using frozen corn, make sure it’s thawed and drained.

      Mix Wet Ingredients:

        - In a large mixing bowl, combine the mashed avocado, eggs, and milk. Whisk together until smooth and well combined.

          Combine Dry Ingredients:

            - In another bowl, whisk together the flour, cornmeal, garlic powder, cumin, red pepper flakes, salt, and black pepper.

              Combine Mixtures:

                - Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

                  Add Corn and Herbs:

                    - Fold in the corn kernels, chopped green onions, and fresh herbs (cilantro or parsley). Mix until distributed evenly throughout the batter.

                      Heat the Oil:

                        - In a non-stick or cast-iron skillet, heat about 1/4 inch of olive oil over medium heat until it shimmers.

                          Fry the Fritters:

                            - Using a 1/4 cup measuring cup or spoon, scoop the batter and drop it into the hot oil, flattening each fritter slightly with the back of the spoon. Fry in batches, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side or until they are golden brown and crispy.

                              Drain and Serve:

                                - Once cooked, transfer fritters to a plate lined with paper towels to drain excess oil. Serve warm with lime wedges on the side for a zesty kick!
