Ingredients

4 medium zucchinis (spiralized into zoodles)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/2 cup fresh basil leaves, roughly chopped

3 tablespoons extra-virgin olive oil

2 tablespoons balsamic glaze

1 tablespoon fresh lemon juice

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for a kick

Instructions

Prepare the Zoodles: Start by spiralizing the zucchinis to create zoodles. If you don’t have a spiralizer, you can use a julienne peeler or buy pre-spiralized zucchini from the grocery store.

Combine Salad Ingredients: In a large mixing bowl, add the spiralized zoodles, halved cherry tomatoes, and mozzarella balls.

Add Fresh Herbs: Toss the fresh basil leaves into the bowl. The aromatic flavor of the basil will enhance the salad beautifully.

Dress the Salad: In a small bowl, whisk together the olive oil, balsamic glaze, lemon juice, salt, and pepper. If you enjoy a bit of heat, add the red pepper flakes to the dressing.

Mix Everything Together: Pour the dressing over the zoodle salad and gently toss until everything is well combined and coated with the dressing.

Chill and Serve: For the best flavor, let the salad sit for about 10-15 minutes to allow the flavors to meld together. Serve chilled or at room temperature for a refreshing dish!
