2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

4 large flour tortillas (or corn tortillas for a gluten-free option)

1 cup shredded lettuce (romaine or iceberg)

1 medium tomato, diced

½ cup red onion, thinly sliced

½ cup corn (canned or fresh, grilled for extra flavor)

½ cup black beans, rinsed and drained

½ cup shredded cheddar cheese (optional)

½ cup cilantro, chopped

1 avocado, sliced (for garnish)

½ cup creamy chipotle sauce or ranch dressing (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, combine olive oil, smoked paprika, cumin, garlic powder, salt, pepper, and lime juice. Add the chicken breasts and coat them well in the marinade. Let them sit for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

    Cook the Chicken: Heat a grill pan or outdoor grill over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove the chicken and let it rest for about 5 minutes.

      Prepare the Filling: While the chicken is resting, chop the cooked chicken into bite-sized pieces. In a large bowl, combine the shredded lettuce, diced tomatoes, sliced red onion, corn, black beans, shredded cheddar cheese (if using), and cilantro.

        Assemble the Wraps: Lay a tortilla flat on a clean surface. In the center, add a generous portion of the chicken filling. Drizzle with creamy chipotle sauce or ranch dressing, if desired. Top with sliced avocados.
