French Onion Stuffed Chicken

4 boneless, skinless chicken breasts

2 large onions, thinly sliced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 cup beef or chicken broth

1 teaspoon sugar

2 cloves garlic, minced

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

1 cup Gruyère cheese, shredded

1 cup cream cheese, softened

Salt and pepper to taste

½ cup panko breadcrumbs

Fresh parsley for garnish

Instructions
 

Prepare the onions: Heat olive oil and butter in a large skillet over medium heat. Add the sliced onions and sprinkle with sugar. Cook for about 20-25 minutes, stirring frequently, until caramelized and golden brown. Add minced garlic and thyme, and cook for an additional 2 minutes. Pour in the broth and let it simmer until the liquid reduces by half. Remove from heat and let cool slightly.

    Prepare the stuffing mixture: In a mixing bowl, combine the softened cream cheese with the cooled onion mixture and half of the Gruyère cheese. Season with salt and pepper to taste.

      Prepare the chicken: Preheat your oven to 375°F (190°C). Carefully slice a pocket into each chicken breast. Be sure not to cut all the way through.

        Stuff the chicken: Take about ¼ of the onion mixture and stuff it inside each chicken breast pocket. Secure the opening with toothpicks if necessary.

          Coat the chicken: In a shallow dish, mix the remaining Gruyère cheese with panko breadcrumbs. Roll each stuffed chicken breast in the breadcrumb mixture to coat.

            Bake the chicken: Place the stuffed chicken breasts on a lined baking sheet. Bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the breading is golden brown.
