1 cup long-grain rice (such as basmati or jasmine)

4 medium onions, thinly sliced

4 cups beef broth (or vegetable broth for a vegetarian option)

1 cup white wine (or additional broth)

2 tablespoons unsalted butter

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and freshly ground black pepper, to taste

1 bay leaf

1 cup grated Gruyère cheese (plus extra for topping)

Fresh parsley, chopped for garnish

Instructions
 

Prepare the Rice: Rinse the rice under cold water until the water runs clear. This removes excess starch and will keep your rice fluffy.

    Caramelize the Onions: In a large heavy-bottomed pot, heat the butter and olive oil over medium-low heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 30-40 minutes, tuning the heat down as necessary, until the onions are deep golden brown and caramelized.

      Add Garlic and Thyme: Stir in the minced garlic and thyme. Cook for about 1-2 minutes until fragrant.

        Deglaze the Pot: Pour in the white wine, scraping the bottom of the pot to release any browned bits. Let the wine reduce by half (about 3-4 minutes).

          Add Broth and Rice: Stir in the beef broth and bay leaf, then bring to a simmer. Add the rinsed rice, and stir to combine. Season with salt and pepper. Cover the pot and reduce heat to low. Cook for 18-20 minutes or until the rice is tender and has absorbed the liquid.

            Cheese It Up: Once the rice is cooked, remove the bay leaf. Stir in the grated Gruyère cheese until melted and well combined. Taste and adjust seasoning as necessary.
