Ingredients

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

3 cloves garlic, minced

2 tablespoons ginger, grated

2 tablespoons soy sauce

1 tablespoon Sriracha (adjust to taste)

1 tablespoon honey

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/4 cup green onions, chopped

1/4 cup cilantro, chopped

1 tablespoon sesame seeds

1 head butter lettuce or romaine, leaves separated

Lime wedges, for serving

Instructions

Prepare the Shrimp Marinade: In a mixing bowl, combine the olive oil, minced garlic, grated ginger, soy sauce, Sriracha, honey, rice vinegar, and sesame oil. Stir until well mixed.

Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade. Cover and let it marinate in the fridge for at least 15 minutes (or up to 1 hour for more flavor).

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp (discarding the excess marinade). Cook for about 2-3 minutes on each side or until the shrimp turns pink and opaque. This should take around 5-6 minutes total.

Assemble the Lettuce Cups: Once the shrimp is cooked, remove it from the heat and mix in the chopped green onions and cilantro.

Serve: Spoon the shrimp mixture into the lettuce leaves, creating little cups. Sprinkle sesame seeds over the top for added crunch and garnish with lime wedges on the side.

Enjoy: Serve immediately and enjoy the spicy, zesty flavors of your Firecracker Shrimp Lettuce Cups!
