Ingredients

For the Meatballs:

1 lb ground chicken

1/2 cup breadcrumbs (panko preferred for crunch)

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions

2 garlic cloves, minced

1 tablespoon ginger, minced

1 large egg

1 teaspoon sesame oil

1/2 teaspoon salt

1/4 teaspoon black pepper

For the Firecracker Sauce:

1/2 cup sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon Worcestershire sauce

1 teaspoon cornstarch mixed with 1 tablespoon water (optional for thickening)

To Garnish:

Sesame seeds

Additional chopped green onions

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Make the Meatball Mixture: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, green onions, minced garlic, minced ginger, egg, sesame oil, salt, and black pepper. Mix until all ingredients are well incorporated but don't overmix.

Form the Meatballs: Using your hands, roll the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet. Make sure to leave space between each meatball.

Bake the Meatballs: Bake in the preheated oven for 20-25 minutes or until the meatballs are golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

Prepare the Firecracker Sauce: While the meatballs are baking, combine sweet chili sauce, sriracha, soy sauce, rice vinegar, and Worcestershire sauce in a small saucepan over medium heat. If you'd like a thicker sauce, stir in the cornstarch mixture. Cook for about 5 minutes until heated through, stirring occasionally.

Coat the Meatballs: Once the meatballs are done baking, remove them from the oven and immediately toss them in the hot Firecracker Sauce until well coated.

Serve and Garnish: Transfer the sauced meatballs to a serving platter, sprinkle with sesame seeds and additional chopped green onions for garnish. Serve warm with toothpicks or over rice for a main dish.
