Ingredients

8 slices of good-quality sourdough bread

1 cup fig jam

4 ounces cream cheese, softened

1 cup sharp cheddar cheese, shredded

1/2 teaspoon fresh thyme leaves (optional)

4 tablespoons unsalted butter, softened

Salt and pepper, to taste

Additional toppings (optional): sliced prosciutto, arugula, or walnuts

Instructions

Prepare the Bread: Lay out the slices of sourdough bread on a clean surface. Spread a generous layer of cream cheese on one side of each slice. This will create a creamy barrier, preventing the bread from getting soggy.

Add the Fig Jam: On top of the cream cheese on four slices, spread a layer of fig jam, evenly distributing it. Season lightly with salt and pepper. If using, sprinkle fresh thyme leaves over the fig jam for added flavor.

Cheese It Up: On top of the fig jam, add a layer of shredded sharp cheddar cheese, evenly covering the surface. For a heartier melt, you can also add slices of prosciutto or sprinkle some walnuts for a nutty crunch.

Assemble the Sandwiches: Place the other four slices of bread (cream cheese side down) on top of the cheese-covered slices to form sandwiches.

Butter the Outside: Spread softened butter on the outside of each sandwich, making sure to coat them evenly for a golden, crispy finish while cooking.

Cook the Sandwiches: Heat a large skillet or griddle over medium heat. Once hot, carefully place the sandwiches into the skillet. Cook for 3-4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted.

Cut and Serve: Once both sides are perfectly golden and the cheese has melted, remove the sandwiches from the skillet. Let them cool for a minute before slicing into halves or quarters. Serve warm, optionally topping with arugula for a fresh crunch.
