1 pound fresh green beans, trimmed

3 tablespoons vegetable oil

4 cloves garlic, minced

2 teaspoons fresh ginger, grated

2-3 teaspoons Szechuan peppercorns (adjust for heat preference)

1-2 tablespoons chili paste (adjust for heat preference)

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon sugar

2 scallions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prep the Green Beans: Blanch the trimmed green beans in boiling water for about 2-3 minutes until bright green and slightly tender. Immediately transfer them to an ice bath to stop the cooking process. Drain and set aside.

    Heat the Oil: In a large wok or heavy skillet, heat the vegetable oil over medium-high heat until shimmering.

      Sauté Aromatics: Add the minced garlic, grated ginger, and Szechuan peppercorns to the pan. Sauté for about 30 seconds or until fragrant, being careful not to burn the garlic.
