Ingredients

1 pound ground turkey

2 cups day-old bread, cubed (preferably sourdough or whole grain)

1 cup celery, finely chopped

1 cup onion, finely chopped

1 cup fresh or frozen cranberries (thawed if using frozen)

1/2 cup dried cranberries, chopped

1/2 cup walnuts or pecans, chopped (optional)

2 large eggs

1 teaspoon garlic powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup chicken or vegetable broth

Olive oil (for greasing)

Instructions

Preheat Oven: Begin by preheating your oven to 375°F (190°C). Grease a baking sheet with a light drizzle of olive oil.

Sauté Vegetables: In a skillet over medium heat, add a splash of olive oil and sauté the chopped onions and celery until they are soft and translucent, about 5-7 minutes. Remove from heat and let cool slightly.

Mix the Ingredients: In a large mixing bowl, combine the ground turkey, sautéed vegetables, day-old bread cubes, fresh cranberries, dried cranberries, and nuts (if using).

Add Spices and Eggs: In a small bowl, whisk together the eggs, garlic powder, thyme, rosemary, salt, and black pepper. Pour this mixture over the turkey mixture, followed by the chicken or vegetable broth. Mix everything together using your hands or a spatula until well combined. Be careful not to overmix, as this can make the stuffing balls tough.

Shape the Balls: Using your hands, form small balls (about 1-1.5 inches in diameter) and place them on the greased baking sheet. Leave a little space between each ball to ensure they cook evenly.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the stuffing balls are golden brown and cooked through (internal temperature should reach 165°F/74°C).

Serve: Remove from the oven and let cool for a few minutes before serving. These festive cranberry turkey stuffing balls can be enjoyed on their own or drizzled with a light gravy or cranberry sauce.
