1 lb ground turkey

12 oz penne pasta (or pasta of choice)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

2 cups chicken broth (or vegetable broth)

1 cup shredded cheddar cheese (plus more for topping)

1 cup sour cream

1 teaspoon olive oil

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Optional toppings: avocado slices, lime wedges, sliced jalapeños

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large, deep skillet or Dutch oven, heat olive oil over medium heat. Add diced onion and bell pepper, cooking until softened, about 3-4 minutes. Stir in minced garlic and sauté for an additional 1 minute until fragrant.

      Brown the Turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and fully cooked through, about 5-7 minutes. Season with salt and pepper.

        Combine Ingredients: Stir in the taco seasoning, canned diced tomatoes, black beans, corn, and chicken broth. Bring to a simmer, allowing the mixture to combine and the flavors to meld for about 5 minutes.

          Add Pasta and Cheese: Gently fold in the cooked pasta and shredded cheddar cheese until well combined. Let it cook for another 2-3 minutes until the cheese is melted and everything is heated through.
