Fall Crockpot Chicken Sausage Pasta

1 lb chicken sausage (sliced into rounds)

1 cup whole wheat penne pasta

1 medium onion (diced)

2 cloves garlic (minced)

1 red bell pepper (chopped)

1 zucchini (sliced)

2 cups fresh spinach

15 oz can diced tomatoes (with juices)

2 cups chicken broth

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1/2 cup grated Parmesan cheese (for garnish)

1 tbsp olive oil

Prepare the Sausage: In a skillet over medium heat, add the olive oil. Once hot, add the sliced chicken sausage and sauté for about 5-7 minutes until lightly browned. Remove from heat and set aside.

    Combine Ingredients: In your crockpot, combine the diced onion, minced garlic, chopped red bell pepper, sliced zucchini, and the sautéed chicken sausage.
