Easy Veggie Quesadillas with Avocado Cream

For the Veggie Quesadillas:

4 large whole wheat tortillas

1 cup shredded cheese (cheddar, Monterey Jack, or a cheese blend)

1 cup bell peppers, sliced (any colors)

1/2 cup red onion, thinly sliced

1 cup mushrooms, sliced

1 cup zucchini, diced

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish, optional)

For the Avocado Cream:

1 ripe avocado

1/2 cup Greek yogurt (or sour cream)

1 tablespoon lime juice

Salt to taste

Prepare the Veggies: Heat olive oil in a large skillet over medium heat. Add the sliced bell peppers, red onion, mushrooms, and zucchini. Sprinkle with cumin, chili powder, salt, and pepper. Sauté for about 5-7 minutes until the vegetables are tender and slightly caramelized. Remove from heat and set aside.

    Make the Avocado Cream: In a blender or food processor, combine the ripe avocado, Greek yogurt (or sour cream), lime juice, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning to taste. If it seems too thick, you can add a splash of water or more lime juice to reach your desired consistency.

      Assemble the Quesadillas: Lay one tortilla in the skillet over low heat. On one half of the tortilla, sprinkle a layer of shredded cheese, followed by a generous helping of the sautéed veggies. Top with more cheese and fold the tortilla over. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas.

        Serve: Remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges and serve warm with a side of avocado cream. Garnish with fresh cilantro if desired.
