For the Stir-Fry:

2 tablespoons vegetable oil

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 medium carrot, julienned

1 cup snap peas, trimmed

2 green onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

Salt and pepper to taste

For the Sesame Noodles:

8 ounces noodles (spaghetti, udon, or rice noodles)

2 tablespoons sesame oil

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon honey or maple syrup

1 teaspoon sesame seeds

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the noodles:

    - In a large pot, bring water to a boil and cook noodles according to package instructions until al dente. Drain and set aside.

      Prepare the sauce:

        - In a small bowl, whisk together 2 tablespoons sesame oil, 2 tablespoons soy sauce, rice vinegar, honey (or maple syrup), and sesame seeds. Set aside.

          Stir-frying the vegetables:

            - Heat vegetable oil in a large skillet or wok over medium-high heat.

              - Add the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.

                - Toss in the sliced bell pepper, broccoli, carrot, and snap peas. Stir-fry for 4-5 minutes, or until the vegetables are vibrant and tender but still crisp.

                  Combine:

                    - Lower the heat and pour in the soy sauce and hoisin sauce. Stir to combine and coat the vegetables evenly.

                      - Season with salt and pepper to taste.

                        Mix noodles and stir-fry:

                          - Add the cooked noodles to the vegetable mixture, tossing thoroughly to coat the noodles in the sauce and mix with the vegetables.

                            - Drizzle with sesame oil and give one last toss to incorporate everything well.

                              Garnish and serve:

                                - Remove from heat, garnish with chopped green onions and fresh cilantro or parsley if desired. Serve immediately while hot.
