Easy Turkey and Sweet Potato Chili

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 medium sweet potato, peeled and cubed

1 can (14 oz) diced tomatoes (with juice)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 cup chicken or vegetable broth

1 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 tbsp olive oil

Optional toppings: sour cream, fresh cilantro, shredded cheese, or avocado

Instructions
 

Cook the turkey: In a large pot, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon (about 5-7 minutes). Drain excess fat if necessary.

    Sauté the vegetables: Add the diced onion and minced garlic to the pot. Sauté for 3-4 minutes until the onion is translucent.

      Add sweet potatoes: Stir in the cubed sweet potato and cook for another 5 minutes, letting them soften slightly.

        Combine ingredients: Pour in the diced tomatoes (with juice), black beans, kidney beans, and broth. Stir well to combine all the ingredients.

          Season the chili: Add chili powder, cumin, smoked paprika, salt, and black pepper. Mix thoroughly to ensure all spices are evenly distributed.

            Simmer: Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for 25-30 minutes, or until the sweet potatoes are tender and the chili has thickened, stirring occasionally.
