4 salmon fillets (about 6 oz each)

1/4 cup soy sauce

1/4 cup mirin (sweet rice wine)

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 2 teaspoons water (optional, for thickening)

For the Bowls:

2 cups cooked jasmine rice or brown rice

1 cup broccoli florets

1 cup snap peas

1 carrot, julienned

1/4 cup green onions, chopped

Sesame seeds for garnish

Optional: Pickled ginger for serving

Marinate the Salmon: In a small bowl, whisk together the soy sauce, mirin, honey, rice vinegar, ginger, garlic, and sesame oil. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes, or up to 2 hours for a stronger flavor.

    Prepare the Rice and Vegetables: While the salmon is marinating, cook the rice according to package instructions. Set aside. Steam or blanch the broccoli and snap peas until tender but still vibrant, about 2-3 minutes. Rinse under cold water to stop the cooking process. Mix in the julienned carrots.

      Cook the Salmon: Preheat your grill pan or skillet over medium-high heat. Remove the salmon from the marinade, reserving the marinade for later.

        Grill or pan-sear the salmon skin-side down for about 4-5 minutes, then flip and cook for an additional 3-4 minutes, or until cooked through and flaky. For a thicker sauce, add the reserved marinade back to the pan along with the cornstarch slurry and cook for an additional 1-2 minutes until thickened.

          Assemble the Bowls: In serving bowls, layer the cooked rice first, then top with the steamed vegetables. Place a salmon fillet on each bowl and drizzle with the teriyaki sauce.

            Garnish and Serve: Sprinkle chopped green onions and sesame seeds on top. Serve with pickled ginger on the side if desired.
