Easy Spinach and Pine Nut Stuffed Calamari

12 medium-sized calamari tubes (cleaned)

2 cups fresh spinach, chopped

1/2 cup pine nuts, toasted

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 small onion, finely chopped

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 tablespoons olive oil

1 cup marinara sauce

Fresh parsley, chopped (for garnish)

Prep the Filling: In a large skillet over medium heat, add 1 tablespoon of olive oil. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let it cool slightly.

    Combine Ingredients: In a mixing bowl, combine the cooked spinach mixture with ricotta cheese, Parmesan cheese, toasted pine nuts, red pepper flakes (if using), salt, and pepper. Mix well until fully combined.

      Stuff the Calamari: Carefully spoon the filling mixture into each calamari tube, using a small spoon or pastry bag. Fill each tube to about three-quarters full to allow for expansion during cooking. Secure the openings with toothpicks or tie them with kitchen twine.

        Cook the Calamari: In the same skillet, add the remaining tablespoon of olive oil over medium heat. Gently place the stuffed calamari into the skillet. Sear for about 2-3 minutes on each side until they are golden brown.

          Add Sauce: Pour the marinara sauce over the calamari, cover the skillet, and reduce the heat to low. Simmer gently for another 10-12 minutes, allowing the flavors to meld and the calamari to cook through.

            Serve: Carefully transfer the stuffed calamari to a serving platter. Drizzle with any remaining sauce from the pan, and garnish with fresh parsley. Enjoy warm!
