Easy Shrimp Guacamole Tostadas

1 lb (450g) peeled and deveined shrimp

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper, to taste

4-6 corn tostada shells

2 ripe avocados

1 small onion, finely diced

1 tomato, diced

1 lime, juiced

1/4 cup cilantro, chopped

1 small jalapeño, minced (optional for heat)

Feta or cotija cheese, for garnish (optional)

Instructions
 

Prepare the Shrimp: In a bowl, combine the shrimp with olive oil, paprika, garlic powder, salt, and pepper. Mix well to ensure the shrimp are evenly coated.

    Cook the Shrimp: Heat a skillet over medium heat. Once hot, add the seasoned shrimp and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and set aside.

      Make the Guacamole: While the shrimp are cooking, halve the avocados and remove the pits. Scoop the flesh into a mixing bowl and mash it with a fork until smooth but still chunky. Stir in the diced onion, diced tomato, lime juice, cilantro, and minced jalapeño (if using). Season with salt to taste.

        Assemble the Tostadas: Place the corn tostada shells on a serving platter. Spread a generous amount of guacamole on each tostada.

          Top with Shrimp: Place the cooked shrimp on top of the guacamole on each tostada.

            Garnish and Serve: If desired, crumble some feta or cotija cheese over the top for added flavor. Serve immediately, garnished with extra lime wedges and cilantro if desired.
