8 oz (about 2 cups) rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (any color), diced

1 cup sweet corn (canned or frozen)

1/2 cup red onion, finely chopped

1 cup ranch dressing (store-bought or homemade)

1 cup shredded cheddar cheese

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Optional: 1/2 cup cooked bacon bits for extra flavor

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare Vegetables: While the pasta is cooling, prepare your vegetables. Halve the cherry tomatoes, dice the cucumber and bell peppers, and finely chop the red onion.

      Mix the Salad: In a large mixing bowl, combine the cooled rotini pasta, cherry tomatoes, cucumber, bell peppers, sweet corn, red onion, and the optional bacon bits if using.
