Ingredients

2 cups cooked jasmine rice (preferably chilled)

1 cup pork tenderloin, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 tablespoons vegetable oil

1 small onion, diced

2 garlic cloves, minced

1 cup mixed vegetables (peas, carrots, and corn)

2 large eggs, lightly beaten

3 green onions, chopped

Salt and pepper to taste

Instructions

Marinate the Pork: In a bowl, combine the sliced pork tenderloin with 1 tablespoon of soy sauce and 1 tablespoon of oyster sauce. Let it marinate for about 15 minutes while you prepare the other ingredients.

Prepare the Rice: If using leftover rice, break up any clumps with your hands or a fork for even cooking. If cooking fresh rice, spread it out on a baking sheet to cool more quickly.

Cook the Pork: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork to the pan and stir-fry for about 4-5 minutes until cooked through and lightly browned. Remove and set aside.

Sauté Aromatics: In the same skillet, add an additional tablespoon of oil. Add the diced onion and minced garlic, sautéing for 2-3 minutes until the onion becomes translucent and fragrant.

Add Vegetables: Stir in the mixed vegetables and continue to cook for another 2-3 minutes until they are tender.

Scramble the Eggs: Push the veggie mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked.

Combine Everything: Add the chilled rice to the skillet, breaking it apart well. Return the cooked pork to the pan. Add the remaining soy sauce and stir everything together. Cook for an additional 3-4 minutes, mixing thoroughly until everything is heated through and well combined.

Final Touches: Stir in the chopped green onions, and season with salt and pepper to taste. Serve immediately, enjoying the delightful flavors of your Easy Pork Fried Rice!
