Ingredients

3 ripe peaches, peeled and pitted

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust for sweetness)

1 tablespoon lemon juice

1 teaspoon vanilla extract (optional)

A pinch of salt

Instructions

Prepare the Peaches: Slice the peeled peaches into chunks and place them in a blender or food processor.

Blend the Mixture: Add the Greek yogurt, honey or maple syrup, lemon juice, vanilla extract (if using), and a pinch of salt to the blender with the peaches. Blend until smooth and creamy. Taste the mixture and adjust the sweetness if necessary.

Fill the Molds: Pour the peach yogurt mixture into popsicle molds, leaving a little space at the top for expansion. If desired, you can add small peach chunks to the molds for extra texture.

Insert Sticks: Place the popsicle sticks into the molds. If your molds have lids, cover them. If not, you can use a piece of aluminum foil to hold the sticks in place.

Freeze: Transfer the filled molds to the freezer and freeze for at least 4-6 hours, or until completely solid.

Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull out the popsicles and enjoy your delicious Peach Yogurt Popsicles right away!
