Ingredients

1 cup water

½ cup unsalted butter

1 cup all-purpose flour

4 large eggs

1 teaspoon vanilla extract

½ teaspoon salt

½ teaspoon baking powder

¼ cup powdered sugar (for dusting)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Dough: In a medium saucepan, combine the water and butter. Bring to a boil over medium heat. Once boiling, add the flour, salt, and baking powder all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan. This should take about 1-2 minutes.

Incorporate Eggs: Remove the saucepan from the heat and let it cool for about 5 minutes. Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy. Stir in the vanilla extract.

Shape the Puffs: Using a spoon or a piping bag, scoop or pipe small mounds of the dough (about 1 tablespoon each) onto the prepared baking sheet, leaving enough space between them to allow for rising.

Bake: Bake in the preheated oven for 20-25 minutes or until the Nun's Puffs are golden brown and puffed up. Avoid opening the oven door during the first 15 minutes of baking to ensure they puff properly.

Cool and Dust: Once baked, remove from the oven and let them cool slightly on a wire rack. Dust generously with powdered sugar before serving.

Serve Warm: Enjoy your delicious Nun's Puffs warm, either on their own or filled with whipped cream or chocolate ganache for an extra treat!
