4 boneless, skinless chicken breasts

Salt and pepper to taste

1 tablespoon olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup fresh spinach, roughly chopped

Fresh basil, for garnish (optional)

Instructions
 

Preheat the stove: Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides.

    Sear the chicken: Once the oil is hot, add the chicken breasts to the skillet. Sear for about 5-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté garlic and tomatoes: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the chopped sun-dried tomatoes and stir them together with the garlic.

        Create the creamy sauce: Pour in the heavy cream and chicken broth. Stir to combine, then bring the mixture to a simmer. Let it cook for about 3-4 minutes, allowing it to thicken slightly.
