Easy Fruit Pasta Bake

12 oz (340g) gluten-free fusilli pasta (or any pasta of your choice)

1 cup strawberries, hulled and sliced

1 cup blueberries

1 cup chopped peaches (fresh or canned)

1 ripe banana, sliced

1 cup plain Greek yogurt

1 cup cottage cheese

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 cup shredded coconut (unsweetened)

1 cup granola (optional for topping)

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Boil Pasta: In a large pot, bring water to a boil and add a pinch of salt. Cook the pasta according to the package instructions until al dente. Drain and set aside.

      Prepare Fruit Mixture: In a large mixing bowl, combine the sliced strawberries, blueberries, chopped peaches, and banana. Gently toss the fruit to mix evenly.

        Make the Cream Sauce: In a separate bowl, mix the Greek yogurt, cottage cheese, honey (or maple syrup), vanilla extract, cinnamon, and a pinch of salt until smooth and well-combined.

          Combine Ingredients: Add the cooked pasta to the fruit mixture and pour the cream sauce over it. Stir everything gently until the pasta and fruits are coated evenly with the sauce.

            Add Coconut: Stir in half of the shredded coconut into the pasta and fruit mixture for an extra layer of flavor.

              Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch (23x33 cm) baking dish. Spread it out evenly.

                Top and Bake: Sprinkle the remaining shredded coconut and granola (if using) over the top of the pasta bake. Bake in the preheated oven for about 25-30 minutes, or until the top is golden and bubbly.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh mint leaves if desired. Serve warm or at room temperature.
