Ingredients

1 lb ground pork (or ground turkey/chicken for a lighter option)

1 tablespoon sesame oil

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon ginger, minced

4 cups coleslaw mix (or shredded cabbage and carrots)

1/4 cup soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon sriracha (optional for heat)

2 green onions, sliced

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions

Cook the Meat: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the ground pork (or turkey/chicken) and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.

Sauté the Aromatics: Add diced onion, minced garlic, and ginger to the skillet. Sauté for about 2-3 minutes until the onions are translucent and fragrant.

Add the Slaw: Stir in the coleslaw mix. Cook for another 3-5 minutes until the cabbage has wilted but still retains some crunch.

Season the Mixture: Pour in the soy sauce, rice vinegar, and sriracha (if using). Stir well to combine all ingredients. Cook for an additional 2 minutes. Taste and season with salt and pepper as needed.

Serve and Garnish: Remove from heat and top with sliced green onions and sesame seeds before serving.
