1 lb (450g) boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

3 large carrots, sliced

2 celery stalks, sliced

1 medium zucchini, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14.5 oz) diced tomatoes, with juices

6 cups chicken broth

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper to taste

1 cup frozen peas

Fresh parsley, for garnish

Instructions
 

Sauté Chicken: In a large pot, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes on each side until golden brown. Remove from the pot and set aside.

    Cook Aromatics: In the same pot, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.

      Add Vegetables: To the pot, add the sliced carrots, celery, zucchini, and green beans. Stir and cook for another 3-4 minutes until the vegetables begin to soften.

        Combine Ingredients: Dice the cooked chicken into bite-sized pieces and return it to the pot. Add the diced tomatoes (with juices), chicken broth, thyme, basil, salt, and pepper. Stir everything together.

          Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the vegetables are tender and the flavors meld together.
