Easy Chicken Fajita Quesadillas for Dinner

2 boneless, skinless chicken breasts, sliced into thin strips

1 bell pepper (any color), sliced

1 medium onion, sliced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

4 large flour tortillas

2 cups shredded cheese (cheddar, Monterey Jack, or a mix)

Fresh cilantro, chopped (optional for garnish)

Sour cream and salsa, for serving

Instructions
 

Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced chicken strips and season with chili powder, cumin, garlic powder, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove from the skillet and set aside.

    Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Toss in the sliced bell pepper and onion. Cook for about 4-5 minutes, stirring occasionally, until they are softened and slightly caramelized. Return the cooked chicken to the skillet and mix everything together. Adjust seasoning if necessary.

      Prepare the Quesadillas: Preheat a separate non-stick skillet over medium heat. Place one tortilla in the skillet, then sprinkle a generous amount of shredded cheese on half of the tortilla. On top of the cheese, add an even layer of the chicken and vegetable mixture. Fold the tortilla in half over the filling.

        Cook the Quesadilla: Cook the folded tortilla for about 2-3 minutes on one side, or until golden and crispy. Carefully flip and cook the other side for another 2-3 minutes until the cheese is melted and the tortilla is golden brown. Remove from the skillet and let it cool slightly before slicing into wedges.

          Repeat: Repeat the process with the remaining tortillas and filling.

            Serve: Arrange the quesadilla wedges on a platter, garnish with chopped cilantro, and serve with sour cream and salsa on the side.
