Ingredients

8 oz fettuccine pasta

1 lb boneless, skinless chicken breasts, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and pepper, to taste

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, seasoned with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Prepare the Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant. Pour in the heavy cream, bring to a gentle simmer, and stir. Gradually whisk in the grated Parmesan cheese until smooth and creamy.

Combine Ingredients: Add the cooked chicken back into the skillet along with the drained fettuccine. Toss everything together until the pasta is well coated in the sauce. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

Season and Serve: Sprinkle in the Italian seasoning, and adjust the seasoning with additional salt and pepper if needed. Remove from heat and garnish with fresh chopped parsley before serving.
