1 1/2 cups graham cracker crumbs

1/4 cup unsweetened cocoa powder

1/2 cup granulated sugar

1/2 cup unsalted butter, melted

3 (8 oz) packages cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1/2 cup heavy whipping cream

1 teaspoon lemon juice

Zest from 1 lemon

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Make the Crust: In a medium bowl, mix together the graham cracker crumbs, cocoa powder, granulated sugar, and melted butter until combined. Press this mixture into the bottom of a 9-inch springform pan. Make sure to pack it tightly and evenly. Bake the crust for 10 minutes, then let it cool while you prepare the filling.

      Prepare the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until creamy and smooth. Gradually add in the powdered sugar and continue to mix.

        Add Wet Ingredients: Mix in the vanilla extract, eggs (one at a time), sour cream, heavy whipping cream, lemon juice, and lemon zest until all ingredients are fully incorporated and the mixture is smooth and creamy. Scrape down the sides of the bowl as needed.

          Bake the Cheesecake: Pour the cheesecake filling into the cooled crust. Smooth the top with a spatula. Bake in the preheated oven for about 50-60 minutes, or until the edges are set but the center slightly jiggles.

            Cool the Cheesecake: Turn off the oven and let the cheesecake sit in the oven for about 1 hour with the door cracked open. This helps prevent cracking. Remove from the oven and let it cool completely at room temperature.

              Chill: Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set fully.

                  Serve: Carefully remove the sides of the springform pan. Slice the cheesecake into wedges and enjoy!
