Ingredients

6 large eggs

1 cup whole milk

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup cooked and crumbled breakfast sausage (or diced ham)

1 cup fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

4 cups cubed day-old bread (French or sourdough works best)

Fresh herbs for garnish (parsley or chives)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and greasing a 9x13 inch baking dish with cooking spray or a little butter.

Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, whole milk, salt, pepper, garlic powder, and onion powder until well blended.

Layer the Ingredients: In the greased baking dish, start layering the cubed bread, followed by the cooked sausage (or ham), chopped spinach, halved cherry tomatoes, and shredded cheddar cheese. Ensure an even distribution of ingredients for a balanced flavor in each bite.

Pour the Egg Mixture: Slowly pour the egg mixture over the layered ingredients in the baking dish. Gently press down on the bread cubes to ensure they soak up the egg mixture.

Let it Rest: Cover the dish with foil and let it sit for at least 15 minutes. This allows the bread to absorb the egg mixture. If you have more time, refrigerating it overnight will enhance the flavors.

Bake: Remove the foil and place the dish in the preheated oven. Bake for 30-35 minutes, or until the casserole is puffed, golden on top, and a toothpick inserted in the center comes out clean.

Garnish and Serve: Once cooked, remove from the oven and let it cool for a few minutes. Garnish with fresh herbs before slicing. Serve warm, and enjoy this delightful Easter breakfast with your family!
