For the Dilly Beans:

1 cup fresh green beans, trimmed

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon apple cider vinegar

1 teaspoon dill weed (fresh or dried)

Salt and pepper to taste

For the Rice Bowl:

1 cup jasmine or basmati rice

2 cups vegetable broth (or water)

1 small carrot, julienned

½ cucumber, thinly sliced

½ cup cherry tomatoes, halved

¼ cup red onion, finely chopped

¼ cup feta cheese, crumbled (optional)

Fresh dill for garnish

Lemon wedges, for serving

Instructions
 

Prepare the Dilly Beans:

    - In a saucepan, bring salted water to a boil. Blanch the trimmed green beans for about 2-3 minutes until bright green and tender-crisp. Remove and immediately place them in an ice bath to stop the cooking process.

      - In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the blanched green beans, apple cider vinegar, dill weed, salt, and pepper. Cook for an additional 3-4 minutes until heated through and slightly crispy. Set aside.

        Cook the Rice:

          - Rinse the jasmine or basmati rice under cold water until the water runs clear. In a medium pot, combine the rice with the vegetable broth (or water) and bring to a boil over medium-high heat.

            - Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until all the liquid is absorbed. Remove from heat, fluff with a fork, and let it sit, covered, for another 5 minutes.

              Assemble the Rice Bowl:

                - In serving bowls, start with a generous scoop of the cooked rice as the base.

                  - Top the rice with the sautéed dilly beans, julienned carrot, cucumber slices, cherry tomatoes, and red onion.

                    - If using, sprinkle the feta cheese over the top and garnish with fresh dill.

                      Serve:
