Ingredients

For the Cookies:

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1/3 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon sea salt

1 cup dark chocolate chips (70% cacao or higher)

For the Caramel Filling:

1 cup granulated sugar

1/4 cup unsalted butter, cubed

1/2 cup heavy cream

1/2 teaspoon sea salt

Extra sea salt for sprinkling

Instructions

Make the Caramel:

    - In a medium saucepan over medium heat, add the granulated sugar. Stir constantly until melted and turns to a deep amber color (about 5-7 minutes).

      - Carefully add the cubed butter while stirring continuously until melted. Then slowly pour in the heavy cream, stirring until smooth. Be cautious as the mixture will bubble vigorously.

        - Remove from heat and stir in the sea salt. Allow to cool for 10 minutes before transferring to a heatproof bowl. Let it cool completely while you prepare the cookie dough.

          Prepare the Cookie Dough:

            - In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

              - Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

                - In a separate bowl, sift together the flour, cocoa powder, baking soda, and sea salt. Gradually mix the dry ingredients into the wet ingredients until just combined.

                  - Fold in the dark chocolate chips until evenly distributed.

                    Assemble the Cookies:

                      - Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

                        - Using a cookie scoop or tablespoon, drop a mound of dough onto the prepared baking sheet about 2 inches apart.

                          - Using your thumb or the back of a spoon, create a small indentation in the center of each cookie. Fill each indentation with about 1 teaspoon of the cooled caramel sauce.

                            Bake:

                              - Bake in the preheated oven for 10-12 minutes, or until the edges are set, and the centers still look slightly soft.

                                - Remove the cookies from the oven and immediately sprinkle a pinch of sea salt on top of each cookie.

                                  - Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                                    Enjoy:

                                      - Serve the cookies warm, or store them in an airtight container at room temperature for up to a week. These indulgent cookies will satisfy your chocolate and caramel cravings!
