2 medium cucumbers, diced

2 cups cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh mint leaves, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon honey

Prepare the Vegetables: Start by washing the cucumbers and cherry tomatoes thoroughly. Dice the cucumbers into bite-sized pieces. Slice the cherry tomatoes in half and place them into a large mixing bowl.
