2 medium zucchinis

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon black pepper

1 large egg

1 tablespoon olive oil

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and dry the zucchinis thoroughly. Cut off the ends and slice them into fries about ½ inch thick. If you prefer thinner fries, adjust the thickness according to your liking.

      Make the Breading Mixture: In a shallow bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and pepper. Mix well until all ingredients are evenly incorporated.

        Prepare the Egg Wash: In another bowl, whisk the egg and add 1 tablespoon of olive oil to it. This will help the breadcrumbs stick better.
