4 large whole wheat tortillas

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

½ cup red onion, finely chopped

1 cup shredded lettuce (iceberg or romaine)

1 cup shredded cheddar cheese (or a vegan cheese alternative)

½ cup cilantro, chopped

1 lime, juiced

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

½ cup ranch dressing (or a vegan alternative)

Optional: hot sauce or salsa for extra flavor

Instructions
 

Prepare the Veggie Filling: In a large mixing bowl, combine the black beans, corn, diced red bell pepper, cherry tomatoes, diced avocado, red onion, cilantro, and shredded lettuce.

    Season the Mixture: Add lime juice, cumin, smoked paprika, salt, and pepper to the veggie mixture. Toss gently until all the ingredients are well coated and the flavors are evenly distributed.

      Assemble the Wraps: Lay a whole wheat tortilla flat on a clean surface or plate. Spread a generous spoonful of ranch dressing across the center of the tortilla, then add a heaping scoop of the veggie mixture on top.

        Roll the Tortilla: Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top, ensuring the filling is secure inside. Repeat with the remaining tortillas.
