Ingredients

1 cup raw almonds

1 cup raw cashews

1 cup raw pecans

1 cup raw walnuts

1/2 cup pumpkin seeds (pepitas)

1/4 cup sunflower seeds

2 tablespoons olive oil

2 tablespoons maple syrup

1 teaspoon sea salt

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional for heat)

1/2 cup dried cranberries or raisins (optional for sweetness)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

Mix the Nuts and Seeds: In a large mixing bowl, combine the almonds, cashews, pecans, walnuts, pumpkin seeds, and sunflower seeds.

Prepare the Coating: In a separate small bowl, whisk together the olive oil, maple syrup, sea salt, smoked paprika, garlic powder, and cayenne pepper (if using).

Combine: Pour the oil mixture over the nuts and seeds, and stir well until all the nuts are evenly coated.

Spread on Baking Sheet: Transfer the mixture to the prepared baking sheet, spreading it out in an even layer to ensure even roasting.

Roast the Mix: Bake in the preheated oven for 15-20 minutes, stirring halfway through to promote even browning. Keep an eye on the mix to prevent burning, as nuts can roast quickly.

Add Dried Fruit: Once the nuts are golden and fragrant, remove them from the oven and let them cool slightly. If you’re adding dried cranberries or raisins, stir them in now, allowing them to soften a bit from the residual heat.

Cool and Store: Allow the snack mix to cool completely on the baking sheet. Once cooled, transfer to an airtight container for storage. Enjoy as a healthy snack!
