2 medium-sized beets

1 tablespoon olive oil

1 teaspoon sea salt

1 teaspoon garlic powder

½ teaspoon smoked paprika

Freshly ground black pepper, to taste

Optional: Herbs or spices of your choice (e.g., thyme, rosemary, or cayenne pepper)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare the Beets: Scrub the beets under running water to clean them thoroughly. Trim off the tops and roots. Using a mandoline slicer or a sharp knife, slice the beets into thin rounds, approximately 1/8 inch thick. The thinner the slices, the crunchier the chips will be.

      Season the Slices: In a mixing bowl, combine the beet slices with olive oil, sea salt, garlic powder, smoked paprika, and freshly ground black pepper. Toss well until the beet slices are evenly coated.

        Arrange on Baking Sheet: Spread the seasoned beet slices in a single layer on the prepared baking sheet, making sure they don’t overlap. This will ensure even roasting and crispening.

          Roast the Chips: Place the baking sheet in the preheated oven and roast for about 25-30 minutes, flipping the chips halfway through to promote even cooking. Keep a close eye on them as they can burn easily. The chips are done when they are crispy and have turned a vibrant color.
