Crunchy Peanut Butter Rice Bars

2 cups puffed rice cereal

1 cup creamy peanut butter

1/2 cup honey or maple syrup

1/2 cup mini chocolate chips (optional)

1/4 cup chopped nuts (almonds, walnuts, or your choice)

1/2 teaspoon vanilla extract

Pinch of salt

Cooking spray or parchment paper for lining the pan

Instructions
 

Prepare the Pan: Line an 8x8-inch baking pan with parchment paper or lightly coat it with cooking spray for easy removal.

    Mix Ingredients: In a medium saucepan over low heat, combine the peanut butter, honey (or maple syrup), and a pinch of salt. Stir until the mixture is smooth and fully combined. Remove from heat and add in the vanilla extract.

      Combine with Cereal: In a large mixing bowl, add the puffed rice cereal. Pour the warm peanut butter mixture over the cereal. With a spatula or wooden spoon, gently mix until all of the puffed rice is evenly coated. If using, fold in the mini chocolate chips and chopped nuts.

        Press into the Pan: Transfer the mixture to the prepared baking pan and spread it out evenly. Use the back of a spatula or your hands (dampened to prevent sticking) to firmly press the mixture into the pan, ensuring it’s well compacted.

          Chill and Set: Allow the mixture to cool at room temperature for about 30 minutes, or place in the refrigerator for about 15 minutes until it is set and firm to the touch.

            Cut and Serve: Once the mixture is set, lift it out of the pan using the edges of the parchment paper. Place it on a cutting board and cut into bars or squares. Store leftovers in an airtight container for up to one week.
