Crunchy BBQ Tofu Power Bowl

Ingredients
  

14 oz firm tofu, pressed and cubed

1 cup cooked quinoa

1 cup cherry tomatoes, halved

1 cup corn (fresh or canned, drained)

1 avocado, diced

1 cup shredded carrots

1 cup red cabbage, finely shredded

¼ cup green onions, sliced

¼ cup cilantro, chopped

¼ cup BBQ sauce (your choice)

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Optional toppings: sesame seeds, lime wedges, hot sauce

Instructions
 

Prepare the Tofu: Preheat your oven to 400°F (200°C). In a bowl, toss the cubed tofu with olive oil, garlic powder, onion powder, salt, and pepper until well coated. Spread the tofu in a single layer on a lined baking sheet.

    Bake the Tofu: Bake the tofu in the preheated oven for 25-30 minutes, flipping halfway through, until the tofu is golden brown and crispy.

      Cook the Quinoa: While the tofu is baking, rinse the quinoa under cold water. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the water has been absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.

        Prep the Veggies: While the quinoa cooks, chop and prepare the cherry tomatoes, corn, avocado, shredded carrots, red cabbage, green onions, and cilantro.

          Assemble the Power Bowl: In a large bowl or serving dish, layer the cooked quinoa as the base. Add the crispy baked tofu on top, followed by the cherry tomatoes, corn, avocado, shredded carrots, and red cabbage.

            Add BBQ Sauce: Drizzle the BBQ sauce over the top of the bowl, and gently toss the ingredients together to combine all the flavors.

              Garnish and Serve: Sprinkle with green onions and cilantro, and add any optional toppings like sesame seeds or a squeeze of lime juice for extra flavor. Serve immediately and enjoy your vibrant and nutritious power bowl!
