4 cups of fresh or frozen sweet corn kernels

2 cups diced ham (smoked or honey-glazed for added flavor)

1 medium onion, finely chopped

3 medium potatoes, peeled and diced into small cubes

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons fresh parsley, chopped (for garnish)
