Crockpot Corn Chowder

4 cups fresh or frozen corn kernels

1 cup diced potatoes (Yukon Gold or Russet)

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

3 cups vegetable or chicken broth

1 cup heavy cream (or coconut milk for a lighter version)

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 tablespoons olive oil or butter

Fresh chives or parsley, for garnish

Optional: 1 cup bacon bits or cooked sausage (for extra flavor)

Prep the Ingredients: Begin by preparing all your vegetables. Dice the potatoes, onion, and bell pepper, and mince the garlic.

    Saute the Aromatics: In a skillet over medium heat, add olive oil or butter. Sauté the diced onion, garlic, and red bell pepper for about 5 minutes, until softened and fragrant. This step enhances the flavors in your chowder.

      Combine in the Crockpot: Transfer the sautéed mixture to the crockpot. Add the corn, diced potatoes, broth, dried thyme, smoked paprika, salt, and black pepper. If you’re using bacon or sausage, add it at this stage for additional flavoring.

        Cook the Chowder: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The chowder is ready when the potatoes are tender.

          Blend for Creaminess: If you prefer a creamy texture, use an immersion blender to puree a portion of the chowder directly in the crockpot (be cautious of splashes). You can also transfer a couple of cups to a regular blender, blend, and return it to the pot for creaminess.

            Add the Final Touches: Stir in the heavy cream (or coconut milk) and adjust seasoning if necessary. Allow the chowder to heat through for additional 10-15 minutes on low.
