Crockpot Cheesy Chili Tortilla Soup

1 lb ground beef (or ground turkey for a lighter option)

1 medium onion, chopped

3 cloves garlic, minced

2 cans (15 oz each) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juices)

1 can (10 oz) diced tomatoes with green chilies

1 cup corn (frozen or canned, if using canned, drain it)

4 cups beef or vegetable broth

2 teaspoons chili powder

2 teaspoons cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (or Mexican blend cheese)

Tortilla chips, crushed (for serving)

Optional garnishes: sour cream, avocado slices, sliced jalapeños, fresh cilantro, lime wedges

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey. Break it up with a spatula as it cooks until it's no longer pink. Drain the excess fat and set aside.

    Sauté Aromatics: In the same skillet, add chopped onions and sauté until they are translucent, about 5 minutes. Add minced garlic and sauté for an additional minute until fragrant.

      Combine Ingredients in Crockpot: In a large crockpot, combine the browned meat, sautéed onions and garlic, kidney beans, black beans, diced tomatoes, corn, and broth.
