Crispy Tofu Fajita Wraps

14 oz firm tofu, pressed and drained

2 tablespoons cornstarch

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

3 tablespoons olive oil (divided)

1 large bell pepper (any color), thinly sliced

1 medium onion, thinly sliced

2 cloves garlic, minced

4 whole wheat or corn tortillas

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Optional: favorite salsa or hot sauce, for serving

Instructions
 

Prepare the Tofu: Start by pressing the tofu to remove excess moisture. Once pressed, cut the tofu into bite-sized cubes.

    Seasoning Mixture: In a mixing bowl, combine the cornstarch, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper. Toss the tofu cubes in this mixture until well coated.

      Crisp the Tofu: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the coated tofu cubes in a single layer. Cook for about 5-7 minutes, until they are golden brown and crispy, flipping occasionally. Remove the tofu from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell pepper, onion, and minced garlic. Sauté for approximately 5-6 minutes until the vegetables are tender and slightly charred.

          Assemble the Fajitas: Heat the tortillas in a dry skillet or microwave until warm. Lay out each tortilla and start layering with the crispy tofu, sautéed vegetables, and avocado slices.

            Garnish and Serve: Top with fresh cilantro and a squeeze of lime juice. Optionally, add your favorite salsa or hot sauce for an extra kick.
