Ingredients

1.5 pounds Brussels sprouts, trimmed and halved

3 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 tablespoon balsamic vinegar

2 tablespoons grated Parmesan cheese (optional)

Fresh lemon zest for garnish

Fresh parsley, chopped, for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure a crispy finish.

Prepare the Brussels Sprouts: Rinse and trim the Brussels sprouts by cutting off the stem ends and removing any outer leaves that look wilted or damaged. Pat them dry with a paper towel to remove excess moisture.

Seasoning: In a large mixing bowl, combine the halved Brussels sprouts, olive oil, sea salt, black pepper, garlic powder, and smoked paprika. Toss everything together until the sprouts are evenly coated.

Roasting: Spread the seasoned Brussels sprouts in a single layer on a large baking sheet. Make sure they have space between them for even roasting.

First Roast: Place the baking sheet in the preheated oven and roast the Brussels sprouts for 20 minutes. After 20 minutes, stir them around to ensure they cook evenly.

Second Roast: Continue roasting for an additional 15-20 minutes, or until the Brussels sprouts are deeply golden and crispy on the outside, stirring halfway through.

Balsamic Drizzle: Once roasted to perfection, take them out of the oven and immediately drizzle with balsamic vinegar, tossing to coat.

Add Cheese: If desired, sprinkle the grated Parmesan cheese on top while they are still hot, allowing it to melt slightly.

Garnish: Serve the Brussels sprouts hot, garnished with fresh lemon zest and chopped parsley for a pop of flavor and color.

Enjoy: Pair them as a side to your favorite main dish or enjoy them as a healthy snack!
