4 large russet potatoes, scrubbed and diced into small cubes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup sliced jalapeños (fresh or pickled)

1/2 cup diced tomatoes

1/2 cup black olives, sliced

1/4 cup chopped green onions

1/4 cup sour cream or Greek yogurt (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Season and Roast the Potatoes: In a large bowl, combine the diced potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until the potatoes are evenly coated. Spread them out in a single layer on a large baking sheet. Bake in the preheated oven for 25-30 minutes or until crispy and golden brown, flipping halfway through for even cooking.
