1 large eggplant

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for baking

Marinara sauce for dipping (optional)

Instructions
 

Prepare the Eggplant:

    - Preheat your oven to 425°F (220°C).

      - Slice the eggplant into sticks about 1/2 inch wide.

        - Place the eggplant sticks in a colander, sprinkle with salt, and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry with paper towels.

          Set Up Breading Stations:

            - On three separate plates, place the flour on the first plate, beat the eggs in a bowl for the second, and mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper on the third plate.

              Bread the Eggplant:

                - Working in batches, coat each eggplant stick in flour, shaking off the excess.
